Savory Chili Chicken Verde Recipe

This crockpot chili chicken recipe will be a staple in your weekly meal prep routine. I’ve used this recipe for the past three weeks and I am still obsessed! The ingredients will yield 10-12 servings for 2 people. If you have a lot of leftovers, use it for a hearty dinner!


  • 3-4 Boneless skinless chicken breasts 
  • 2 Jars of Verde salsa
  • 2 Cans of pinto beans
  • 1 Bag of frozen corn
  • Brown rice (pre-cooked) 

You can also add black beans for added protein and fiber. You can also make this vegetarian by skipping the chicken.

Recipe Prep (5 minutes or less) 

  • Dice up the chicken into smaller chunks 
  • Drain and rinse the beans


Throw everything into a crock-pot for 6 hours on high or 8 hours on low. 

I add 3/4 cups of brown rice and 1 scoop of this recipe into my lunches. It is super filling and tasty. Let us know how your recipe turns out!
